Maldoum
3 potatoes
3 tomatoes
1 eggplant
1 sweet or spicy green chili pepper
Meat mixture:
500g minced meat
1 onion
Handful of chopped parsley
1 tsp salt
1 tsp paprika powder
1 tsp black pepper
Tomato sauce:
1/2 cup tomato passata
1/2 cup water
1 tsp salt
1/2 tsp black pepper
1 tsp paprika powder
1. Slice the potatoes, tomatoes and eggplant in rounds. Sprinkle some salt on them. Letting the salt pull out all the extra water from the eggplant. You can bake the potatoes and eggplant coated in olive oil in the oven or fry them.
2. Chop the onion and parsley and add them to your meat with the other spices. Mix well and form meat patties.
3. Assembling the tomatoes, eggplant, potatoes and meat patties in a baking dish in rows one after the other. Place the green chili on top. Bake in the oven on 225°C for about 30 minutes. Without the tomato sauce to prevent the meat to be cooked. We want it baked.
4. While it’s baking prepare your tomato sauce.
5. Remove the maldoum from the oven and add your tomato sauce. Put it back in the oven for about 30 minutes or until the meat is tender.
