How to make a sweet and simple cookie with sprinkles.

Ingredients:
1 Cup Vegetable Shortening
1 Cup Sugar
1/4 Teaspoon Salt
1 Egg + 1 egg for wash
2 Teaspoons Vanilla Extract
2 Cups All Purpose Flour
Round Rainbow Sprinkles

Directions:
1. In a mixing bowl, beat the vegetable shortening with a mixer on low, until light and fluffy. Scrape down the sides of the bowl. Add the sugar and salt; beating just until combined and smooth. Add the egg and vanilla and beat just until incorporated.
2. Add the flour in three parts, beating just until combined after each addition. Turn the dough out onto a lightly floured surface. Divide the dough into 4 equal portions and shape into balls. Cover and refrigerate 3 dough balls.
3. Carefully roll out the fourth ball to 1/2 inch thickness. Using a 3 inch round cookie cutter, cut out rounds. Set aside any scraps. Transfer cookie rounds to a parchment lined baking sheet. Repeat with the remaining dough balls. Press together any scraps, reroll, and cut out more cookie rounds.
4. Brush tops of cookies with an egg wash (1 egg beaten), then sprinkle with rainbow sprinkles. Bake in a preheated oven at 350F for 1012 minutes or until lightly browned. Let cookies cool completely on a wire rack.
