Today I made a beautiful mini fruit basket pie.
This is a mini fruit basket pie that I completed after a lot of thought and testing because I wanted to make a more unique basket weaving pattern.
My goal was to make it look like a real basket.
I injured my wrist while doing an oven test.
I edited a lot to avoid seeing the injured part in the video, but there are moments that I can see..

It's very hot these days, isn't it?
I filled the inside with lemon ganache monte cream, which is perfect for this hot weather.
This lemon cream is really tasty.
Of course, there is a hassle of making it the day before and having to refrigerate it, but after you taste it, it will probably be forgiven.
It's really delicious.

Crispy on the outside and filled with sweet jam and lemon cream on the inside!

● Cup measure standard
237 ml = 1 cup
15ml = 1Tbsp
5ml = 1tsp
1 egg (without shell) 53g
Heavy Cream (38% milk fat)
(Chocolate is minced, flour is before sieving)

● Finished pie size [ Top diameter 8cm 7cm 5cm(H) / 4~5 pieces ]
[Bottom diameter 7cm*6cm]
● Ingredients

● Refreshing Lemon Ganache Montee Cream
200g heavy cream (3/4 cup+1Tbsp+1tsp)
1 lemon zest
40 g white chocolate (1/4 cup)

35g Mascarpone (2Tbsp)
10g sugar (1/2Tbsp+1tsp)
5ml Lemon Liqueur (1tsp)
(Dijon Lemon)

● Pie dough

250g All Purpose Flour (1 cup + 3/4 cup)
150g unsalted butter (1/2 cup + 3Tbsp)

55g water (3Tbsp + 2tsp)
6g sugar (1/2Tbsp)
1 g of salt
1 yolk

● Egg wash
Yolk: Milk = 4:1

Fruit Jam ( Lemon, Mango, Strawberry, Blueberry,,,,)
