Mirror Glaze Cake Recipe:

✴Ingredients:
75 grams water
150 grams sugar
150 grams glucose
125 grams breakfast cream
150 grams white chocolate
50 grams gelatin mass

✴How to Make Gelatin Mass:
80 grams water
20 grams gelatin powder

Mix the water and gelatin powder.
Heat the mixture in a double boiler until the gelatin granules are completely dissolved.

Strain the mixture to remove any bubbles—this is very important.
Refrigerate for 2 hours until set, then use as needed.

✴Instructions for Mirror Glaze:
Place water, sugar, and glucose in a pot over heat.

✅ Stir the mixture until it reaches a boil.
Once it reaches a boil, remove from heat.
Add the white chocolate, breakfast cream, and gelatin mass, stirring until completely smooth.

✅ It's better to slightly heat the cream to make it smooth and avoid lumps in the glaze.

Strain the mixture to remove any impurities.
Blend the mixture with an immersion blender for 6 minutes.

✅ Wait until the glaze is not too hot before blending. The glaze should have cooled down a bit.

✅ A crucial tip: do not move or lift the blender while blending to minimize the formation of bubbles.

Use parchment paper as explained in the video to remove any bubbles from the surface of the glaze.

Refrigerate the glaze for 12 hours.

After this time, the glaze will have thickened in the refrigerator, which is normal.

Microwave the glaze to make it fluid again.
Now, you can add your desired colors to the glaze.
You can create multiple colors if desired.

✅ Be careful not to overheat the glaze; it should be just warm and fluid enough.

Before pouring the glaze over the cake, it's best to freeze the cake for 1 hour.
This glaze technique is unique because when you pour different colors over each other, they blend and create a beautiful watercolor effect.
