Monastery Lentils  - a delicious healthy vegan soup

The monastery lentils is a tasty and very healthy vegan soup with carrot, leek and garlic.
It is very popular during the Orthodox Nativity Fast.

For 4 servings:

250 grams of lentils
1 carrot
1 leek
1 cup of tomatoes 250 grams
4 cloves of garlic
12 sprigs of savory 1 tsp of thyme + 1/2 tsp or orégano
4 tablespoons sunflower oil (olive oil)
1 1/2 teaspoon salt

Preparation method
1. Put the lentils in 1.21.3 liters of cold water, together with the carrots and leeks, choped into small pieces.
2. Drizzle with oil, cook for 20 minutes.
3. Add the peeled and crushed tomatoes and garlic cloves.
4. Add the savory and salt, add hot water if necessary.
Let it simmer for another 1520 minutes, at the end pour 1 tablespoon of vinegar and serve.
