MOONG – RIDGE GOURD DAL RECIPE
INGREDIENTS
1.Greengram(moong) dal ½ cup
2.Ridge gourd (cubed) 500g (4 cups)
3.Tomato cubed 1
4.Big onion cubed 1
5.Green chilli 1 – 2
6.Ghee 1 – 2 tsp
7.Cumin seeds ½ tsp
8.Asafoetida ½ tsp
9.Chilli powder ½ + ½ tsp
10.Coriander powder ½ tsp
11.Turmeric powder ¼ tsp
12.Salt to taste
GARNISH
13.Coriander leaves chopped 2tbsp
14.Ghee 1 tsp
15.Kasuri methi 1 tbsp
PREPARATION
1.Soak (40mts) and set aside the green gram dal.
2.Grind well items 3,4,5, together in a mixie, set aside.
3.Heat the ghee, let the cumin get puffed, add asafoetida, stir
and add the mixie beaten items to it saute stirring continuously
till oil separates.
4.Add 9, 10, 11 and salt, cook a little more stirring, add the dal
and ridge ground and 2 cups water, pressure cook to half a whistle,
open when cool.
5.Stir, boil adding enough water. Put off the flame and garnish as shown.
