Aourir, Morocco we eat a Moroccan specialty, bissara. Bissara is a blended bean soup. It is best on a cold morning during an Agadir winter. The Moroccan soup is served with bread, dates, and tea with absynthe. Street food in Morocco is served at all hours, but bissara is a morning dish so you must wake up early to enjoy this bean soup. Bessara is served with Moroccan olive oil, cumin, and chile is optional. Moroccan food is often not vegan, but I believe bissara to be a vegan soup. It is rich in protein and healthy fat with the mix of beans and oil. Dates provide a healthy sugar to get your day going. Bissarah is a great way to start your day before, work, surf, or quarantining at home!

This bissara recipe was experimented to perfection. Everyone has a bissara recipe in the family, but I really enjoy Yousseff's style Bessarah. Fez and Tangier are also top spots in Morocco to enjoy bessarah. Stay warm and eat soup!

This place is at the roundabout of Aourir, just down the street from Chez Moulay, Hotel Yassmina. If you drove to Taghazout or Tamraght, you drove to far. North of Agadir, 13 km is the village of Aourir, or Banana Village as it is called by some who surf in Morocco. While living in Morocco you will try all sorts of foods for all moods and seasons in Morocco. The cost of living in Morocco will be cheap if you eat only from the streets of Aourir.
