Recipe
Portion servings: 45 pax

Ingredients:

Cauliflower 1 cup
Beetroot ½ cup
Winter carrots 1 cup
Salt 2 tbsp
Water as required
Butter 5 tbsp
Onion chopped 1 cup
Tomato chopped 1 cup
Green capsicum chopped ½ cup
Green peas ½ cup
Coriander chopped 1 tbsp
Jeera powder 1 tbsp
Kashmiri chilli powder 1 tbsp
Ghati masala ½ tbsp
Coriander powder 1 tbsp
Potato (boiled & peeled) 34 pcs
Oil 1 tbsp
Ladi pav 810 pcs

Method:
In a pressure cooker, add cauliflower, winter carrot, beetroot, salt, water and pressure cook for 34 whistles.
Now, heat a thick bottom pan, add butter, chopped onion and saute until they get translucent.
Then add jeera and saute.
Add chopped tomatoes and cook until it gets mashy.
Then add green peas and saute.
Add mashed boiled potato, salt, jeera powder, kashmiri chilli powder, coriander powder, ghati masala, saute them and add some water.
Now with the help of the masher, mash all the vegetables.
Then add pav bhaji masala, red chilli & garlic paste and cook it for 34 mins.
Later add pressure cooked vegetables and mash them completely.
Now heat a thick flat pan, add oil, water, pav bhaji, butter, chopped coriander and cook it for a minute.
Once done, remove it to a plate.
On the same pan, add butter, red chilli & garlic paste, chopped coriander and toast the ladi pav with the masala.
On the serving plate, add pav bhaji, add chopped onion, chopped coriander, buttered masala pav, a lemon wedge and serve it hot .
Our delicious pav bhaji is ready to eat.
