Delicious Mini Cheescakes Today I bake my wonderful Mini Cheese Cakes. Inspired by American cheesecakes, these mini cheesecakes have a super creamy texture and taste. They are easy to manufacture and are ideal for parties and buffets, but of course also for the coffee table. Enjoy them as they are or give them that certain something with jam topping and fresh berries. So delicious, rebaking recommended!

The main ingredient: a lot of love
Ingredients for the mini cheese cakes:
Ground:
150 g cookies
60 g melted butter

Cheesecake filling:
300 g cream cheese
100 g of sugar
1 packet of vanilla sugar
2 eggs
1 teaspoon lemon juice
15 grams of flour
170 g sour cream

optional:
Jam, fresh berries

Preparation:
Chop biscuits (food processor or in a bag with a rolling pin)
Add melted butter, mix well
Spread the muffin cups in the muffin tin
Pour in the biscuit mixture and press firmly
put aside
The cheese filling:
Beat the cream cheese on low speed until creamy
gradually add sugar + vanilla sugar
add the eggs one at a time until everything is well mixed
Add the flour, sour cream and lemon juice and mix everything briefly
Pour the cheesecake filling evenly into the prepared muffin pan
Bake in the preheated oven at 160 ° C for about 18 minutes
Take out of the oven and let cool in the mold to room temperature
