Levain
25g levain bait
50ml filtered water
50g wheat flour

*This amount is already calculated to have a surplus of levain

Natural fermentation bread
270g wheat flour 00 (13% protein)
30g rye flour
6g salt
200ml filtered water
60g levain

*It is possible to use type 1 wheat flour, but use flours with a protein content greater than 10%.
* You can switch from rye flour to whole wheat flour or plain wheat flour, but rye gives a very special flavor to bread.
