No Egg: Coffee Sugar Cookies ♡ Hard Cookies
Yield: 20 Cookies
Pan: Any Flat Sheet Baking Pan
Baking Time: 12 Minutes
Baking Temperature: 400F/200C (With fan assisted oven for 350F/180C.)

Ingredients:
1 cup canola oil or any neutral oil
1 cup granulated sugar
4 1/2 tablespoons milk
2 tablespoons instant coffee powder
2 cups allpurpose flour
1 tablespoon baking powder
A pinch of fine salt

Instructions:
1. Preheat your oven to 400°F (200°C). If using a fanassisted oven, preheat it to 350°F (180°C).
2. Use an electric mixer to beat them until the sugar has slightly dissolved. This should take about 5 minutes. Incorporate the milk and coffee powder into the creamed mixture, beating until everything is well combined.
3. Sift the flour, baking powder, and salt into the wet mixture. Beat on low speed for approximately 30 seconds. Switch to a spatula to gently fold the ingredients together. You can knead the dough for about 5 minutes using a spatula to ensure thorough combination.
4. Rest the dough in the fridge for at least 30 minutes or overnight.
5. Roll out the dough and cut it into pieces. This recipe will yield approximately 20 round cookies.
6. Place each round dough onto the prepared pan.
7. Bake in a preheated oven for 12 minutes.
8. Let the cookies cool for at least 5 minutes before transferring into a wire rack to cook completely. Enjoy!
