Hello beautiful people, it's lemon season and what's better than a lemon flavoured mascarpone cake? This recipe seems intimidating, but trust me if I can do it? You can absolutely make this cake as well. The best part is? You don't need to bake anything!

Please use a 15cm round mould, I used a 20cm as it was all I had on hand. You still make an excellent cheesecake with either one! Depends if you like your layers bigger or your cake wider!

Biscuit base:

100g biscuits (or cookies for ya'll mmuricanz out there )
30g melted butter

Lemon Curd

1 egg
50g granulated sugar
50ml lemon juice
50g unsalted butter
2g (1 leaf) gelatine
10ml (2 tsp) hot water

Cream Cheese layer

200g cream cheese
50g mascarpone cheese
50g granulated sugar
30ml hot water
5g (2 gelatine leaves)
150ml heavy cream
5ml lemon juice

Cream Cheese Frosting

50g mascarpone cheese
50ml heavy cream
9g granulated sugar

I know this is a lot! Trust me, I was so intimidated too before I made it, but it's all about following the steps one by one and you will impress your family and friends with this cake!
