No Oven? You can still make great sourdough bread :)

Hello friends! This crockpot whole wheat / whole grain sourdough bread was such a revelation to me, I just had to share it! The loaf in this video was only the second I ever made with this method, but I thought it would turn out well so I took the chance and made a recording. I'm glad I did!

Here's the recipe. You can use my recipe, or feel free to try your own. Just don't use a very wet dough, it may come out gummy.

500g whole wheat flour (I used freshly milled flour however you can use storebought)
350g water
1.5 tsp salt
2/3 cup whole wheat sourdough starter

Mix the water and flour together and allow the dough to rest (autolyse) for 3060 minutes. Then mix in the salt and starter and knead the dough in a mixer if you have one, or knead by hand until the dough becomes smooth. You can also make this bread 'no knead' style, or do stretch and folds throughout the bulk fermentation. It will work either way.

Ferment the dough until it has doubled in size and is visibly bubbly. This could take anywhere between 4 and 10 hours, depending on your temperature.

Once the dough is fermented, shape it into a round loaf shape and place into your slow cooker. Use nonstick baking paper or grease the slow cooker pot as you would for a pan loaf. Note that if you have a very large slow cooker you can also put your bread into a pan and place the pan inside the slow cooker. I haven't tried this method (my cooker is small) but I've heard that it works.

Cook your bread on high for 23 hours. The time your loaf takes depends on your cooker and the size of the loaf. Look out for browning on the bottom and sides. You can also do a skewer test (as you would for a cake) to check that the bread is done. If the skewer comes out clean, your bread is cooked!

Cool and enjoy the bread as usual.
