No-Bake Meal Bars - Super-Charged Snacks

Ingredients:
1 cup / 260g pitted soft dates
1/3 cup / 80ml tahini
1 tsp. vanilla extract
1/2 cup / 50g protein powder
2 cups / 180g unsweetened desiccated coconut
2 cups / 70g puffed quinoa (or puffed brown rice)
3 Tbsp. chia seeds
1 cup / 140g pumpkin seeds

Special Equipment:
standard baking equipment
brownie pan

Directions:
1. In a dry skillet over medium heat, toast coconut, stirring often until starting to turn golden. Remove from heat and set aside. Without cleaning the pan, add pumpkin seeds and toast, stirring often until the seeds begin to pop, about 34 minutes. Remove from heat and set aside.
2. Place the dates in a food processor and blend until you have a thick paste. Add the tahini, vanilla, protein powder, and 1 cup / 90g of the toasted coconut. Blend on high until it is well combined.
3. Transfer paste to a large mixing bowl. Fold in the puffed quinoa, chia seeds and toasted pumpkin seeds. Spread into a brownie pan lined with plastic wrap and place in the fridge to firm up. Slice into bars and wrap individually. Store in the fridge.
