MANGO ICE CREAM
2 (12ounce) bags of frozen mango chunks
1 cold can lite coconut milk
8 pitted Medjool dates
2 teaspoons vanilla extract
You'll want to get out your strongest blender to blend all the ingredients smooth. Transfer to a freezer container that will allow the mixture to freeze in the shortest amount of time. Makes about 1 quart.
