Today we bust out the Onlyfire Outdoor Santa Maria Attachment for the Weber Kettle. I decided on tritip for my first cook to break it in. Were going with a couple of my favorite beef rubs. You can save 10% by using code Doc10 at checkout. I picked up these beautiful tritips at Costco. I didn't trim them up one bit at all. Just patted them dry and put the rubs on going heavy.

Lets talk a bit here about set up. I understand that true Santa Maria style cooking would be with all wood. Red Oak if you're a purist. At this point I don't have cost effective access to cooking wood. With my limited cooking wood supply I'm trying new things and setups. This first one involves a full chimney of lump charcoal and adding wood. I will have other setups in future cooks to attempt to find out what works best for me. One thing I did find is closing off the bottom vents really helps with fuel consumption. The double charcoal grates helps with big chunks falling through and bending your ash cleaning blades. Once upon a time I would light my charcoal with two Weber lighter cubes ‪@MaddieandKiki‬ use only one and they are the Weber experts. So now I just use one and it works just as well as using two. Let's get onto the cook. The first thing I am going to say is that it's a total blast to cook on. The second thing I will say is I need to have some more patience and just let it cook high over the flame. Kick back, relax and just enjoy the experience. At some point I would need to give it a sear, but I think on this cook I jumped the gun a bit. I definitely can say that there is no arguing with the end results.
