Oxalates are naturallyoccurring substances found in many foods and even our bodies. While they're mostly benign, high levels can lead to problems like kidney stones, gout, and other health issues. This interview with Elliot Overton will help you understand oxalates better so you can take steps to avoid or manage them.

What are oxalates?

Oxalate is a naturally occurring substance that can be found in many foods. It’s also a salt that your body produces as part of its metabolism, so even if you don’t consume oxalaterich foods, your body will still produce it. Your kidneys work to remove excess oxalate from the body through urination, so it's important to drink enough water (at least 64 ounces every day) so that your kidneys stay healthy and functional to do their job properly.

The crystals produced from the salt can lead to kidney stones or calcium deposits on other parts of the urinary tract—including ureters (tubes connecting kidneys to bladder), which connect kidneys with urine collection systems; bladders; and urethra (the tube for urine). The risk increases if you have an underlying condition such as inherited conditions like primary hyperoxaluria or renal tubular acidosis (RTA).

Why are they bad?

Oxalates are salts that bind to minerals such as calcium and magnesium. Your body needs these minerals, but they also can be harmful if you have too much of them or not enough of the right ones. When oxalate binds with other substances in your body it forms crystals and can cause pain, inflammation and other health problems.

Are there highoxalate foods that I should avoid?

When diet is a factor, many patients are able to reduce their oxalate intake and thereby decrease their risk of developing stones. Highoxalate foods to avoid include:
Spinach
Rhubarb
Tea
Chocolate (dark chocolate is higher in oxalates than white)
Nuts (especially peanuts)
Soy products

How can I flush out existing oxalates?

You can get your body to flush out existing oxalates by eating a Carnivore diet. This means eating only meat, eggs and dairy products. Avoid high oxalate foods like vegetables, fruits, nuts and seeds. You may also want to avoid processed foods as they tend to have added ingredients that can be high in oxalates.

Drink plenty of water! Water helps flush out toxins from the body so this will help remove any excess oxalates that are currently stored in your body.

High levels of oxalates can lead to many health problems.

Oxalates are a form of acid and a component of many foods. When you eat them, your body metabolizes them into oxalic acid, which binds with other minerals such as calcium, magnesium and iron. This can lead to health problems if you have too much oxalate in your diet or your body produces excessive amounts because of a medical condition.

Overexposure to high levels of oxalates can cause kidney stones and arthritis (a breakdown in the cartilage around joints). It's also been linked to diabetes and heart disease when combined with high glycemic load diets (diets with lots of sugar and refined grains).
