2. Lung Marinade
500 grams pork collar (kasim)
Parboiled Pork Lung
2 tsp ground pepper
3 tbsp soy sauce
1/3 cup vinegar
1 cup onion
3. Saute/ Simmer
3 tbsp achuete oil
1/3 cup garlic
1 cup onion
Marinated Lung
3 pcs bay leaves
1 cup water
2 tbsp spicy chilis
4. Liver Marinade
400 grams pork liver
1/3 tsp ground pepper
1 tbsp soy sauce
2 tbsp vinegar
1/4 cup onion
1 tbsp Fish sauce (Patis)
1 tbsp liquid seasoning
1 tsp chicken powder
1 cup carrots
1 cup green chilis
Half cooked liver
5. Cooking Liver
2 tbsp cooking oil
Marinated Liver (drain)
How to Make Achuete/ Annatto Oil = cooking oil + achuete seeds
Cooking Time: approximately 1 hour & 30 minutes
