PANEER BHUNA MASALA
Preparation time 10 minutes
Cooking time 2530 minutes
Serve 24

Ingredients
For Paste
34 tbsp Oil, तेल
1 no. Bay leaf, तेज पत्ता
1 ½ tsp Cumin seeds, जीरा
2 tsp Black peppercorns, काली मिर्च के दाने
67 no. Cloves, लौंग
45 no. Garlic cloves, chopped, लहसुन
1 inch Ginger (peeled & sliced) अदरक
3 large Onions, sliced, प्याज
1 tbsp Gram flour, बेसन
1 tbsp Coriander powder, धनिया पाउडर
Salt to taste, नमक स्वादअनुसार
1 tsp Cumin powder, जीरा पाउडर
4 medium Tomatoes, roughly diced, टमाटर
½ tbsp Black pepper powder, काली मिर्च पाउडर
⅓ cup Curd, beaten, दही

For Frying Paneer
23 tbsp Oil, तेल
800 gms Paneer, cut into medium cube, पनीर
Salt to taste, नमक स्वादअनुसार
1 tsp Degi red chili powder, देगी लाल मिर्च पाउडर

For Paneer Bhuna Masala
2 tbsp Ghee, घी
Remaining Fried Paneer oil, तेल
Prepared Paste, तयार किया हुआ पेस्ट
1 medium Onion, diced, प्याज
1 large Green bell pepper, diced, हरी शिमला मिर्च
1 large Red bell pepper, diced, लाल शिमला मिर्च
½ cup Water, पानी
Fried Paneer, तला हुआ पनीर
1 tsp Tender Coriander stem, finely chopped, धनिये के डंठल
1 tsp dry Fenugreek leaves, crushed, कसूरी मेथी

For Garnish
Coriander sprig, धनिया पत्ता
Lemon wedge, नींबू की फांक

Process
For Paste
In a deep pan or kadai, add oil, once it's hot, add bay leaf, cumin seeds, black peppercorns, cloves and let it splutter well.
Add garlic cloves, Ginger, onions and saute for 24 minutes until golden in color.
Add gram flour and saute it for a minute until aromatic.
Add coriander powder, salt to taste, cumin powder, tomato, black pepper powder, curd, cover it with a lid and cook it well for a while until cooked well.
Transfer it to a mixer grinder jar and grind it smoothly.
Transfer it to a bowl and keep it aside for further use.

For Frying Paneer
In a nonstick pan, add oil, once it's hot, add paneer and fry it for 23 minutes from all sides until golden in color.
Finish it with salt to taste, degi red chili powder and toss it well.
Keep it aside for further use.

For Paneer Bhuna Masala
In a handi, add ghee, remaining fried paneer oil, once it's hot, add prepared paste and cook it well for 45 minutes until thicken.
Add onions, green bell pepper, red bell pepper and saute for a few minutes.
Add water and let it simmer for a minute.
Add fried paneer and cook it well.
Finish it with tender coriander stems, dry fenugreek leaves and mix it well.
Transfer it to a serving dish and garnish it with coriander sprig.
Serve hot with roti.
