Experiment and relax at the same time listening to the noises generated by the kitchen and the preparations themselves, try to replicate my desserts by turning off any source of noise and appreciating the moment!

CUSTARD CREAM:
380g milk
90g sugar
3 yolks
37g rice starch
1 vanilla bean
Lemon peel
SHORT PASTRY:
125g lard
125g sugar
1g salt
1g baking soda
Lemon peel
1 egg
250g flour 00

DOSES FOR: 6 PASTRIES
PASTRY MOLD: 10 cm x 6 cm
STEEL RING: 11 cm

N.B: this version of the pasticciotti is the most original I have found, I had never tasted them before but wow they are fantastic !! I will have to go to Puglia to try them on the spot!
The preparation is not complicated, the only flaw I found is working the pasta in this heat. So my advice is to use it at least two hours after putting it in the refrigerator and try to be as fast as possible. If you prepare them in autumn / winter you will have no problem!
I used nonstick molds, otherwise I suggest you grease and flour the mold.
The custard must be flavored with lemon and veniglia, if you can use the berry because it will have a completely different flavor.
For cooking, check the time because it may take a minute more or less depending on your oven.
Once cooked, let them cool before removing them from the mold, otherwise the dough could break.
