How to make Pav Bhaji Recipe:

Step 1: Prepare Vegetables
1. Rinse, peel and chop the veggies. You will need 4 Medium size Potatoes, 1 Medium Size Beetroot & 1/2 Carrot, 200 g Green Peas and 200 g Cauliflower (Small Size).

2. Add all the above chopped veggies in a 34 Liter's pressure cooker. Also add 1 cup green peas (fresh or frozen). I have cooked the veggies in a pressure cooker.

3.Add 2.25 to 2.5 cups water. Add 1/2 tsp Turmeric Powder (Haldi), 1 tsp Salt. Mix it Well

4. Pressure cook the veggies for 2 to 3 whistles or for about 1012 minutes on medium heat.

5. When the pressure settles down on its own, open the cooker and check if the veggies are fork tender, softened and cooked well. The vegetables have be to cooked completely. Set aside the vegetables with the cooked water (broth/stock) in the cooker itself.

Step 2: Sauté Vegetables & Spices
6. Heat a frying pan or Kadahi (wok) on medium flame. Add 2 Tbsp. Cooking Oil and 2 Tbsp. of butter. The butter can be salted or unsalted. Let the butter melt.

7. Sauté Tomatoes: As soon as the butter melts, add 4 finely chopped Medium Size Tomatoes. You Swap canned tomatoes if you do not have fresh tomatoes. Mix well.

8. Then begin to sauté tomatoes on a low to medium heat. Sauté until the tomatoes become soft, mushy and you see butter releasing from the sides. This takes about 2 3 minutes.

9. Add 1 tsp Salt (to taste), will help in cooking. Keep stirring intermittently.

10. Then add 23 green chilies (chopped). When the tomatoes have softened, add 1 finely chopped medium size capsicum (green bell pepper). Sauté for 2 to 3 minutes.

11. Add 1 Tbsp. Kashmiri Red chili powder, 1/2 Tbsp. turmeric powder, 2 Tbsp. Dhania Powder, and 1 Tbsp. Cumin Seed Powder. Mix very well. Cook for 1 min.

12. Add 2 Tbsp. of Pav bhaji Masala Powder. Depending on how intense is the aroma and flavor of pav bhaji masala, you can add it in less or more proportions. For a more robust and spiced bhaji add 3 Tbsp. of it. Stir it and Cook for 1 min.

13. Add 1 Tbsp. Butter.

Step 4: Include Cooked Vegetables
14. Add the cooked veggies. You can choose to mash the veggies before you add them in the pan or skillet. Mix well. Add all of the stock or water from the pressure cooker in which the veggies were cooked.

15. Mash it with Potato Masher, begin to carefully mash the veggies directly in the pan. You can mash the veggies less or more according to the consistency you want in the bhaji.

16. Add more water if the bhaji looks thick.

17. Stir often so that the bhaji does not stick to the pan. When the bhaji simmers to the desired consistency, check the taste. Add Chopped Cilantro and 1 tbsp. butter for garnish.

Step 5: Toast Pao (Brioche buns)
18. When the bhaji is simmering, you can pan fry the bread rolls so that you serve the pav with steaming hot bhaji. Cut through the bread roll from the center so that you get two equal halves.

19. Heat a tawa or skillet or a shallow frying pan. Keep the heat to a low and then add 1 to 2 tablespoons butter. When the butter begins to melt, add 1 Tbsp. of pav bhaji mix (for 2 to 3 pav).

20. Place the pav on the butter. Press with a spatula and rotate the pav all over the melted butter so that the pav absorbs the butter together with spices.

21. Garnish Bhaji with Butter and Freshly chopped Cilantro or Dhania Leaves.

22. Serve Bhaji with toasted Pao.
