Peanut Butter Protein Balls

1 1/4 cups of powdered peanut butter
3/4 to 1 cup of unsweetened applesauce

1 cup of chocolate chips
1/2 teaspoon of coconut oil

In a mixing bowl, combine all of peanut butter powder and 3/4 cup of unsweetened applesauce. If you like the mixture to be more of a cookie dough consistency do not add more. If you like the mixture to be more of an oatmeal cookie/peanut butter consistency add the other 1/4 cup of applesauce. The consistency can vary due to different circumstances. If you want a dryer better, add more powder if you want more loose better add more applesauce.

Spoon onto a baking sheet, covered with parchment paper, wax paper, or a silicone pad. You can form these into whatever size you would like. Place in the freezer for 15 minutes.

In a double boiler or in a microwavesafe dish, melt your chips. At the end of the melting process, add the coconut oil for a nice shiny chocolate, and it will also help to thin it out to pour over the peanut butter balls.

Remove the peanut butter balls from the freezer and spoon on the chocolate mixture. Place back in the freezer for 15 minutes and remove. Store in a container in the refrigerator.
