Pickled Cabbage

2 pound head of cabbage
1 medium sized carrots
1 medium green bell pepper
1 medium red pepper
1 small onion
3 cups water
3/4 cup sugar
1 1/2 Tablespoons Kosher salt
1 1/2 cups white vinegar

Shred the cabbage and the carrot. Place in a large bowl. Set aside.

Cut both peppers and the onion into small strips. Place in the bowl with the shredded cabbage and carrot. Stir to combine.

Pack the cabbage mixture into three sterilized quart jars. Pack it in tightly.

Using a medium saucepan, combine the water, sugar, Kosher salt, and vinegar. Bring to a rapid boil.

Pour the boiling mixture into the 3quart jars with the cabbage mixture leaving 1inch headspace. Immediately top with a canning lid and ring. Set jars on a tea towel and leave on your kitchen counter until they come to room temperature. Store in the refrigerator.
