細個好多時都會去窩打老道嘅醉瓊樓食晚飯。

一坐低
侍應就會擺兩個深啡色茶壺上枱
一壺普洱一壺滾水
然後就放一碟花生同一碟泡菜。

我最鍾意就係食嗰碟泡菜
但係永遠都唔俾夾太多因為會俾阿媽話冇禮貌

到我大個自己出街食
可惜就已好少見酒樓有呢款餐前泡菜

咁又係唯有自己整起碼而家食晒都冇人鬧

甜酸泡菜 Pickled Cabbage

Ingredients
Cabbage 椰菜 820850g
Carrot 紅蘿蔔 150g
Salt 鹽 ( for cabbage 椰菜用 ) 16g
Salt 鹽 ( for carrot 紅蘿蔔用 ) 3g

Pickling liquid 泡菜汁
Sour plum 話梅 8g ( 23pcs )
Fresh Chili pepper 鮮辣椒 5g
Granulated sugar 白砂糖 280g
Water 水 500g
White or rice vinegar 白或米醋 250g
Salt 鹽 2g
