Pineapple Pie Recipe

Ingredients:
3 eggs, room temperature
1/2 cup sugar
1 teaspoon vanilla extract
3/4 cup vegetable oil
1/4 cup pineapple juice (from the pineapple can)
6 tablespoons shredded coconut
1 1/2 cups cake flour
1 teaspoon baking powder
34 pineapple rings, halved

Instructions:
Preheat the Oven:

Preheat your oven to 180°C (350°F).
Prepare the Egg Mixture:

Combine the eggs, sugar, and vanilla extract. Use an electric mixer to beat the mixture until it becomes light, fluffy, and pale in color.

Add Liquid Ingredients:

Gradually add the pineapple juice and vegetable oil to the egg mixture. Beat for another 30 seconds until well combined.

Combine Dry Ingredients:

In a separate bowl, sift together the cake flour and baking powder. Sift the mixture three times to ensure it is well aerated.
Incorporate Dry Ingredients:

Gently fold the sifted flour mixture into the egg mixture using a spatula or a hand whisk. Mix from one direction to maintain the batter’s airiness.
Add Coconut:

Fold in the shredded coconut until evenly distributed throughout the batter.
Prepare the Baking Pan:

Line a pie pan with parchment paper liners. Fill each liner about 2/3 full with the batter.
Add Pineapple:

Place a halfslice of pineapple on top of each filled liner. For a more decorative touch, you can use whole rings or leave the pineapple without pressing it into the batter.
Bake:

Bake in the preheated oven for about 25 minutes, or until a toothpick inserted into the center comes out clean.
Finish and Decorate:

Once the pies are baked, remove them from the oven. While they are still hot, brush the tops with diluted honey or simple syrup.
Decorate with crushed pistachios or slivers for an added touch.
Serve:

Let the pies cool slightly before serving. Enjoy your delicious pineapple pies!
