For this weekend, Game Freak made a 7star Raid Battle against Eevee along with a Mass Outbreak event where you can easily catch them. Just like the unique Unrivaled Pikachu event back on Pokemon Day, this Eevee has a shield for 100% of its health. Using the tried and true Iron Hands for this event will give you an easy win when you are battling it by yourself. Here's the set I use:

Iron Hands @ Booster Energy
Tera Fighting
Adamant Nature
EVs: 252 Atk and 252 HP
Thunder Punch
Play Rough
Drain Punch
Belly Drum

Overall, it was pretty easy, especially once a Tera Boosted max Attack Drain Punch started to deal a good amount of damage. You just need to take into account that Eevee will likely outspeed your Iron Hands, so you'll need to see how much damage it's doing before you use a Belly Drum.
