INGREDIENTS(serves 4)
For the Gnocchi:
600g of floury potatoes
200g of spinach leaves
175g flour
1 egg
1 tbsp parmesan cheese
salt and nutmeg
For the Sauce:
350g lean ground beef
1/2 glass of wine
1 cup of beef or chicken stock
1 tbsp of butter
3 tbsp of olive oil
salt and pepper
2 egg youlks
1). For the sauce, fry a chopped onion in hot oil and butter and brown the minced beef. Add 1/2 glas of wine and 1cup broth, add salt and pepper and cook slowly for about an hour.
2). Meanwhile, boil the potatoes with their skins. Peel, wash, boil and squeeze the spinach well, then chop it by hand and mix it with the boiled potatoes, still hot. Add the egg, 250g of flour, a tablespoon of Parmesan cheese, salt and grated nutmeg.
3). Divide the dough into 6 pieces and roll them on a well floured surface to obtain fingersized loaves, which you will cut into small pieces (gnocchi).
4). Boil them in abundant boiling salted water. Drain them as soon as they float to the surface then transfer them with the completed sauce.
5). Finish the sauce with a tablespoon of chopped fresh thyme chopped and 2 beaten egg yolks. Serve inmediatelly.
