In today's canning video we're chopping up a whole pile of carrots and then preserving them in mason jars with the pressure canner. As far as pressurecanning goes, it doesn't get much easier than this. We're going to walk through every single step, from peeling the carrots to waiting for those lids to pop!

Carrots Pressure Canning Recipe:
Chop or dice carrots.
Place carrots in sterilized quart or pint jars (this is raw pack; for hot pack you need to blanch the chopped carrots first).
Fill jars with boiling water, leaving 1 inch of headspace.
Process jars (according to your pressurecanner's instructions) at 10lbs of pressure. Process 25 minutes for pints, 30 minutes for quarts.
