✓ PUNJABI SAMOSA DOUGH RECIPE INGREDIENTS:
* Plain Flour (Atta).
* Caraway Seeds (Ajwain).
* Yoghurt (Dahi).
* Oil (Tel).
* Lukewarm Water (Pani).
(Once fully kneaded the dough should be tough).

SAMOSA FILLING:
* Green Peas (Vatana).
* Boiled Mashed Potato (Bateta).
* Red Chilli Flakes (Lal Mirchu).
* Amchoor Powder (Mango Powder).
* Salt (Namak).
* Red Chilli Powder (Lal Mirchu).
* Coriander Powder (Dhana).
* In house Garam Masala.
* Kastoori Methi (Dried Fenugreek Leaves).

How nice and pleasant it was to "discover" a restaurant serving up delicious freshly prepared Paranthas & Samosas.

Parathas are all time favourites in Indian and Pakistan homes alike and can also be found to be served by street food vendors, hawkers and restaurants everywhere in the Indian SubContinent..

Parathas are stuffed (or filled) flatbreads (usually made from unleavened flatbread chapati dough), they can be filled with a variety of spiced up fillings and then it's cooked on a Tawa or hotplate griddle with lots of oil or ghee (in some restaurants it may also be cooked in a tandoori oven).

(The freshly made Paratha was served up piping hot, it was fully loaded and absolutely delicious).

A special thank you to Aman and all the Punjabi Junction staff who very much welcomed me and graciously allowed me a privileged glimpse into their street kitchen "kitchen" to do the videoing.
