Ingredients:
14 oz. Shells or Rigatoni Pasta
2 Tablespoons Olive or Other Vegetable Oil
16 oz. White Mushrooms, Sliced
1/2 Yellow Onion, Chopped
2 Teaspoons Minced Garlic
3/4 Cup Reserved Pasta Cooking Water
2 Tablespoons Italian Seasoning
2 Teaspoons Red Pepper Flakes
2 Teaspoons Chicken Bouillon
10 oz. Baby Spinach
1 Cup Parmesan Cheese

Directions:
1. In a large pot, cook the pasta according to package instructions until al dente. Drain the pasta but reserve 3/4 cup of the cooking water.
2. In a large skillet, heat the oil over medium high heat. Add the mushrooms and onion; cook until the onion is translucent, about 34 minutes, stirring occasionally. Add the garlic and cook 23 more minutes until mushrooms are lightly browned. Add the reserved cooking water, Italian seasoning, red pepper flakes, and chicken bouillon, stirring until well combined. Reduce heat to low. Add the spinach, cover and cook until the spinach wilts. Add the cooked pasta and cheese, stir together until well combined. Serve warm topped with more cheese.
