Full written recipe of Rava Laddu

Serves: 1214 medium sized laddus

Ingredients:
FINE SEMOLINA | बारीक रवा 2 CUPS / 350 GRAMS
OIL | तेल 4 TBSP
WARM WATER | गुनगुना पानी UPTO ½ CUP
POWDERED SUGAR | पीसी हुई शक्कर 1 CUP / 150 GRAMS
CARDAMOM POWDER | इलायची पाउडर ½ TSP
GHEE | घी ½ CUP / 100 GRAMS
GRAM FLOUR | बेसन 3 TBSP
ALMOND | बादाम 2 TBSP (CHOPPED)
PISTACHIO | पिस्ता 1 TBSP (CHOPPED)
CASHEW | काजू 2 TBSP (CHOPPED)
RAISINS | किशमिश 1 TBSP
Method:
Add the semolina into a large bowl along with oil, then mix & massage the semolina to incorporate shortening, it should bind once held in a fist, you can also use ghee instead of oil.
Further add warm water & knead a stiff dough, the quantity of water will vary slightly depending on the quality of the semolina, the dough should not be soft.
Further take small portions from the dough & just flatten it out between your fists.
Fry them in hot oil (165° C) over medium low flame until light golden brown, it will take about 12 minutes.
Once fried, transfer them into a sieve & let them cool down slightly, once you can touch them, roughly break & add them into a bowl so they can cool down faster.
Further grind the mixture, its consistency should be similar to that of coarse semolina, make sure you grind in batches.
Add the mixture into a large bowl, then sieve in the powdered sugar & cardamom powder & mix well.
Set a small pan over medium flame & add 3 tbsp of ghee from the total quantity, once the ghee melts add the gram flour & stir well, cook the gram flour over low flame while stirring continuously until it turns biscuity in colour.
Add the ghee & gram flour mixture into the semolina mixture, then set the pan over medium heat & add the remaining ghee along with the nuts & raisins.
Stir well & fry the nuts over low flame until they turn light golden brown, then add the entire mixture into the semolina mixture & stir well using a spatula.
Once the mixture becomes warm enough to touch, you can mix with your hands & make sure that the ghee gets incorporated properly, if the mixture does not seem to bind them you can heat up a few more tablespoons of ghee & add it gradually.
Take small portions from the mixture & shape then into laddus.
Your rava ke laddu are ready.
