Cakeshare, my white chocolate and raspberry mousse recipe! ASMR
Experiment and relax at the same time listening to the noises generated by the kitchen and the preparations themselves, try to replicate my desserts by turning off any source of noise and appreciating the moment!

DACQUOISE:
95g hazelnut flour
75g powdered sugar
5g cocoa powder
125g egg white
50g sugar
RASPBERRY INSERT:
100g raspberry puree
20g sugar
2g gelatin in sheets
WHITE CHOCOLATE MOUSSE:
60g milk
5g gelatin in sheets
130g white chocolate
200ml cream
DECORATION:
Red velvet spray

DOSES FOR: 6 mono portions
DACQUOISE MOLD DIAMETER: 6 cm
INSERT MOLD DIAMETER: 3.5 cm
MOUSSE MOLD DIAMETER: 7 cm

N.B: the times for these preparations are fundamental, follow the recipe correctly and you will see that it will be perfect. In theory, the dacquoise should be made with almond flour but combined with the flavors of the single portion the hazelnut, in my opinion, suited us much better. For the velvet spray make sure that the single portion is completely frozen (it must stay in the freezer for 12 to 24 hours minimum) because otherwise it would not stick to it. Use some film on the table to not get dirty and stay 20/30 cm away while you spray it. If you prefer you can also do it outdoors !!
