Relish made from ripe or overripe cucumbers

What to do with all those cucumbers? Ripe or Over Ripe can be made into a relish easily. We'll water bath can to keep them shelf stable for years to come. Easy peasy. Recipe from the canning book "Put 'Em Up" by Sherri Brooks Vinton.
2 pounds cukes, peeled, seeded and diced
1 Pound onion
1 green bell pepper
1 red bell pepper
1/2 cup salt
3 cups apple cider vinegar
1.5 cups sugar
1 cup water
2 cloves garlic minced
1 tsp allspice
1 tsp black peppercorns
1 tsp celery seed.

1) toss the cukes, onion, peppers and salt into a large bowl, set aside to drain for 2 hours. drain well
2) combine vinegar, sugar, water, garlic and spices in a stock pot. bring to a boil until sugar is dissolved. add cuke mixture and return to a simmer for 5 mins.
3) you can then put into jars and refrigerate or water bath for 15 minutes to make shelf stable
