Resep Bebek Goreng Krispi (untuk 8 porsi)

Bahan ungkepan:
2 ekor bebek
1 sdm garam
1 sdm penyedap
1 ½ liter air
4 sachet terasi, bakar
50 gr kelapa gongseng
35 gr gula aren, potong

Bumbu halus:
10 siung bawang putih
2 buah kunyit ukuran sedang
1 sdm ketumbar
30 ml Minyak Goreng Fortune

Bumbu rajang:
20 butir kemiri
15 siung bawang merah
5 jempol lengkuas, iris halus
1 jempol jahe, iris
2 buah kencur ukuran besar, opsional

Bahan lainnya:
3 batang serai
5 lembar daun salam
5 lembar daun jeruk

Sambal hitam:
8 siung bawang merah
5 siung bawang putih
5 buah cabai merah besar
25 buah cabai rawit merah
12 buah kluwek, opsional
200 ml air ungkepan bebek
1 sdt penyedap
⅓ sdt garam
2 sdm rempahrempah ungkepan bebek
200 ml air
20 gr gula aren

Pelengkap:
Nasi putih Beras Premium Fortune
Timun kupas
Daun kemangi

Langkah:
1. Untuk bumbu dasar,blender ketumbar, kencur, kunyit, lalu tambahkan Minyak Goreng Fortune , bawang putih, jahe, lengkuas, kemiri, dan bawang merah, lalu tumis hingga minyak keluar
2. Tambahkan serai, daun salam, dan daun jeruk, aduk rata, lalu masukkan bebek, air, gula aren, terasi, garam, penyedap, dan kelapa gongseng, masak selama 1520 menit dengan api besar, lalu kecilkan api masak kembali selama 2030 menit dengan api sedang
3. Angkat bebek, lalu saring rempahrempah dan air ungkepan
4. Diamkan bebek selama 1520 menit sebelum digoreng
5. Untuk sambal, blender bawang merah, bawang putih, cabai rawit, kluwek, cabai merah, dan air ungkepan bebek, lalu tumis hingga minyak keluar
6. Tambahkan gula aren, rempah ungkepan bebek, penyedap, garam, dan air, masak hingga sambal berubah warna
7. Goreng bebek dengan Minyak Goreng Fortune hingga kecokelatan, lalu goreng bumbu rempah ungkepan hingga kering, tiriskan
8. Bebek goreng siap disajikan dengan nasi putih Beras Premium Fortune, kemangi, sambal, dan timun sebagai pelengkap

Crispy Fried Duck Recipe (yield: 8 servings)

Braising ingredients:
2 pc duck
1 tbsp salt
1 tbsp flavor enhancer
1.5 L water
4 sachet shrimp paste, toasted
50 g toasted coconut paste
35 g palm sugar, sliced

Blended Spices:
10 clove garlic
2 pc turmeric, medium
1 tbsp coriander
30 ml Fortune Cooking Oil

Sliced ingredients:
20 pc candlenut
15 pc shallot
5 pc galangal, thumbsized, finely sliced
1 pc ginger, thumbsized, sliced
2 pc aromatic ginger, large, optional

Other ingredients:
3 pc lemongrass
5 pc bay leaf
5 pc kaffir lime leaf

Black Sambal:
8 pc shallot
5 clove garlic
5 pc red chili, large
25 pc red bird’s eye chili
12 pc kluwek, optional
200 ml duck braising liquid
1 tsp flavor enhancer
⅓ tsp salt
2 tbsp duck braising spices
200 ml water
20 g palm sugar

Condiments:
Fortune Premium Rice
Peeled cucumber
Lemon basil

Steps:
1. For the basic spices, blend the coriander, aromatic ginger, and turmeric with Fortune Cooking Oil. Then, add the garlic, ginger, galangal, candlenuts, and shallots. Sauté until the oil seeps out.
2. Add the lemongrass, bay leaves, and kaffir lime leaves in. Stir, then add the duck, water, palm sugar, shrimp paste, salt, flavor enhancer, and toasted coconut paste. Cook for 1520 minutes on high heat, then lower the heat and continue cooking for 2030 minutes on medium heat.
3. Set the duck aside. Strain the braising liquid and spices.
4. Rest the duck for 1520 minutes before frying.
5. For the Sambal, blend the shallots, garlic, bird’s eye chili, kluwek, red chili, and duck braising liquid. Cook until the oil seeps out.
6. Add the palm sugar, duck braising spices, flavor enhancer, salt, and water in. Cook until the Sambal changes color.
7. Fry the duck with Fortune Cooking Oil until browned. Then, fry the braising spices until crisp and set aside.
8. Fried Duck is ready to serve with Fortune Premium Rice, lemon basil, Sambal, and cucumber as the condiments.
