Ingredients (1 to 2 servings)
300g chicken thighs
2 tablespoons salted malt
23 pinches of salt
2 cloves of garlic (small)
1 slice of lemon
A dash of flour
A dash of katakuriko (potato starch)

RECIPE
1) Cut chicken thighs into large pieces, mix with shio koji, salt and garlic and leave to marinate for 2030 minutes.
2) Coat the chicken with a mixture of half flour and half potato starch.
Fry at 170~180° for 4~5 minutes. When golden brown, remove from the pan.
