It can be said that it is one of the great classics of Italian cuisine. I prepared this risotto with a base of mussels and clams, but I added white prawns and a wonderful fresh squid.

The result is a mouthwatering seafood risotto! Of course, it can be called risotto allo scoglio or even risotto with seafood, but the taste of this risotto with very fresh fish does not change. Simply divine!

PREPARATION:

01:17 In a pot with boiling water, prepare the broth with the mantis shrimp, the onion and the parsley stalks
01:37 In a pan with sauté the garlic in boiling oil, add the parsley stalks, mussels and clams to make them open. Add some water and close with a lid
02:12 Clean the prawns, keep the pulp aside and add the heads and shells to the broth
03:11 When they are open, lift the mussels and clams and set aside the cooking liquid
03:58 In a pan, sauté garlic and spring onion in abundant oil. Then add the squid cleaned and cut into strips
04:56 Raise the garlic and add the rice to toast it. Deglaze with white wine
05:19 Add the broth, filtering it a little at a time. Season with salt and also add the cooking liquid from the mussels and clams
06:20 Turn off the heat and add the prawns, mussels and clams. Add extra virgin olive oil, spicy oil and parsley, sauté to whisk
07:43 Serve this fabulous seafood risotto on a flat plate. Garnish with the mussels and clams and their shells

Clams (lupins) 200 gr
Mussels 10 pcs
White prawns 10 pcs
Corn on the cob (or corn on the cob) 8 pcs
Squid (or cuttlefish) 400 gr
Garlic 2 cloves
Fresh spring onion to taste
Extra virgin olive oil
Chilli oil to taste
Parsley to taste
Lemon
White wine
