The pink lever controls both actions: close the green lid and press to create a roti.
In a conventional roti press, these actions are performed separately:

In the initial stage when the load is small, under the action of the yellow flat spring, the pink lever moves together with the violet crank to close the green lid.
When the lid is in contact with the roti, the load is increased, the pink lever bends the flat spring and contacts the lid to create a large pressure.
