Recipe for: Royal Pickles Without Boiling. Winter!

Required products:

3 kg. cambia, previously washed and cleaned of the stalks and seeds
1 head of cauliflower (about 2 kg.)
1 kg. carrots, prepeeled
1 head of celery, prepeeled
9 tea cups of water
4 teaspoons of vinegar
5 teaspoons of sugar
1 teaspoon coarse salt
1 teaspoon of oil
2 tablespoons of black peppercorns
1 tablespoon allspice

Method of preparation:

Roughly chop the scallops.
Cut the celery into small pieces.
Cut the carrots into slices about half a centimeter thick.
Divide the cauliflower into small heads.
Mix all the vegetables well.
Fill the vegetables in previously washed and dried jars (720 ml).
Pour the water, vinegar, oil, sugar and salt into a large saucepan. Turn on the heat and stir until the marinade comes to a boil.
Turn off the heat and wait for the marinade to cool slightly. It should be warm, not boiling hot, when you pour it into the jars.
While the marinade is cooling, put 23 allspice and a few black peppercorns into each jar.
Fill the jars with the warm marinade.
Close the jars with caps and tighten them well.
Turn the jars upside down and wait for them to cool.
Put the jars in the cellar in a dark and cool place for the winter.
