In Aragon, the cultivation of saffron extends along the banks of the Jiloca and the area of ​​the Muniesa mountain range (Teruel), its cultivation and harvesting process being the same as it was a few centuries ago. In 1993 we had the opportunity to accompany the saffron growers of this area of ​​Aragon to learn about the entire process of their cultivation and esbrine.
