We decided to do a little offshore sailing this summer on my Dad's sailboat, VAYU, and of course we had to toss some lines to help pass the time. We had nowhere to be and we had all day to get there. Sailing is so much fun, there is just something so peaceful about it. I highly recommend trying if you have never been. The wind will eventually blow and you can get to where you need to be without burning any fuel. Get out there and be somebody!

Cobia Tacos:
Drizzle olive oil in pan, season 1/4" fish steaks with salt, pepper, smoked paprika, onion powder, garlic powder, cumin, chile powder. Drizzle with olive oil. Bake 15 minutes at 400 degrees. Break apart with forks. Toast tortillas in hot skillet for 1 minute on each side. Serve with red cabbage slaw, mango habanero salsa, avocado, tomatoes, and lime wedges.

King Mackerel Soup:
Heat 4 tablespoons of olive oil in skillet. Add 1 diced onion and 1 diced red bell pepper. Cook until soft over medium heat. Add 4 minced garlic cloves and heat 1 minute. Add 4 tablespoons tomato paste, salt and pepper to taste, 2 15 ounce cans of diced tomatoes, 2 cups coconut milk, 1 cup chicken broth. Heat to a simmer. Add 2 pounds king mackerel chunks. Simmer 810 minutes. Serve with lime wedges and fresh cilantro.
