Save DOUGH with DIY Energy Bars

Making your own energy bars for hiking or backpacking is easy and affordable. On my Pacific Crest Trail hike I consumed up to five energy bars a day at a cost of $3.00 to $4.00 a bar. Today I share two easy to make recipes that I think are winners.
Please feel free to add constructive comments. I freely admit I don’t know all the answers and have blind spots. Feel free to enlighten me. We may disagree, but I’m not afraid of robust conversations.
Recipe 1: Holy Mole
So here is what you need: Tools, a 9 x 13 baking dish, food processor, mixing bowl, and spoon, cutting board, and knife. I also package my energy bars using a vacuum sealer. I preheat my oven to 350 degrees. For ingredients you’ll need to simply mix together
2 cups of almonds, I chop them ahead of time,
3 cups of rolled oats, I cup of green pumpkin seeds,
2 cups of mejoli dates,
I cup of almond butter,
1 cup of dark chocolate chips,
1 cup of agave syrup, and
½ cup of coconut oil.

I cut my almonds a ahead of time to make it easier on my food processor. The same with the dates. I mix all of this in my food processor. I pour these ingredients into a 9 by 13 greased baking dish, and place a sheet of parchment paper over the top and press the ingredients down firmly with the bottom of another baking dish. Bake for about 30 minutes and let cool. Slice into twelve portions, vacuum seal and store in the fridge of freezer before you’re ready to head out. These are stout, calorie rich energy bars. This recipe makes 12 energy bars and according to my calculations each bar has about 440 calories.

Recipe 2: Chocolate Energy Bars (No Bake Recipe)
Tools, a 9x 13 baking dish, food processor, mixing bowl, spoon, cutting board and knife, and I package my energy bars using a vacuum sealer. For ingredients you’ll need to mix the following:
4 cups of chopped medjool dates, which I cut ahead of time
4 cups of raw cashews, which I also chop a bit.
2 cups of raw almonds, which I chop ahead of time.
1 ½ cups of unsweetened cocoa powder
½ cup of coconut oil
1 cup of shredded coconut
4 tsp of vanilla extract
Three tablespoons of water.
1 tsp of kosher salt.

Once you’re done mixing these ingredients in the food processor, spoon it and flatten it out onto a 9 x 13 baking dish covered in cellophane and then place another sheet of cellophone on and another baking dish on top to smash it down. Set the mixture in a fridge of freezer, cut into 12 pieces and vacuum seal. Each energy bar has approximately 470 calories each. These energy bars taste almost like brownies.
