Savory Shrimp Tomato and Coriander Pesto Gourmet Delight! ASMR

Join us as we prepare "Savory Shrimp, Tomato and Coriander Pesto Gourmet Delight!" This dish combines the freshness of shrimp, the rich flavors of tomatoes, and the aromatic touch of coriander pesto for an unforgettable gourmet experience.

Ingredients

600800g fresh shrimp or large prawns, with heads. If frozen, they can be easily defrosted in water.
400g Roma tomatoes
½ kg mixed cherry tomatoes
2 canned tomatoes
75 gr of tomato passatta
20g ground cumin
20g oregano (better fresh, but I didn't find it)
1 piece of ginger
1 green chili
1 red onion
2 garlic cloves
1 bunch of fresh coriander (cilantro)
30g hazelnuts (or any other type of nut you could prefer)
Olive oil
2 limes
1 green onion
Salt and pepper
30g brown sugar
75 gr of Parmiggiano cheese

Preparation

Prepare the Shrimp:

Heat a pan until very hot, add a drop of oil, and sear the shrimp on both sides, leaving the heads and tails on.
Remove from the pan and carefully peel, leaving the heads and tails intact.

Make the Tomato Sauce:

Slice the red onion into julienne strips along with the green chili and garlic.
In a pot with a little oil, add the prepared vegetables. When the garlic begins to color, add the julienned ginger, cumin, and oregano.
Add the Roma and cherry tomatoes, roughly chopped, and cook for 25 minutes. Add the canned tomatoes and the tomato passatta. Add the sliced green chili. Add the brown sugar and cook for another 5 minutes.

Prepare the Coriander Pesto:

While the tomato sauce is cooking, use a food processor to make the coriander pesto.
Blend the coriander, hazelnuts, zest of the two limes, and some olive oil until it forms a coarse paste.

Finish the Sauce:

In the last minute of cooking the tomato sauce, add the shrimp.

Presentation

Plate the dish by adding some of the tomato sauce.
Arrange the shrimp attractively on the plate and drizzle with the coriander pesto.
Garnish with finely chopped green onion.
