After completing the 10th grade, a young lad decided to help his father in their village idli shop in Kanakapura, 60 kilometres from Bengaluru. Half a century on, Mr. Ramchandra has remained steadfast to his father’s culinary tradition, steaming fragrant idlis over a wood fire. A oneman army, he procures the ingredients, prepares the wood to fuel the decadesold stove, soaks the rice and lentils, grinds and carefully ferments the batter, before rising at 4am each morning to make a spicy chutney, and steam over 3000 idlis, 500 in a batch, that run out before noon! Working with the energy and enthusiasm that is hard to imagine in a modernday sextagenarian, Ramchandra swears by the philosophy of “cheap and best”, in his words, selling four pipinghot idlis for only Rs. 10, or Rs. 2.50 a piece! The quality and appeal of the soft, fluffy idlis are such that patrons don't mind a twohour drive just to breakfast at this oldfashioned Kote Idli Mane. Idlis
The idlis are soft and porous, yielding with a slightly pasty texture in its weight. The size of the idlis are such that you can happily savour about four to six without feeling its burden. The spicy, roasted gram and red chilli chutney makes for a delicious accompaniment to the fragrant idlis.
