To Make Sesame Powder

Chana Dal 2 Tbsp
Urad Dal 2 Tbsp
Cumin Seeds 1 Tbsp
Red Chilli 8 Nos
Peppercorns 1 Tsp
Tamarind
Dried Coconut 1 Tbsp
Sesame Seeds 3 Tbsp
Rock Salt 1 Tsp
Hing / Asafoetida 1/4 Tsp


To Make Sesame Rice

Cooked Rice
Oil 3 Tsp
Chana Dal 1 Tsp
Urad Dal 1 Tsp
Peanuts 1 Tbsp
Cashew Nuts
Mustard Seeds 1/2 Tsp
Red Chilli 2 Nos
Curry Leaves
Sesame Powder 3 Tsp
Salt 1/4 Tsp
Ghee 1 Tsp


METHOD:

1. To make the sesame powder, take a pan and add chana dal, urad dal. Saute for 2 minutes.
2. After 2 minutes, add cumin seeds and red chillies.
3. Then add peppercorns and tamarind bits. Mix and roast for 2 minutes.
4. Add coconut bits and roast for 23 minutes on a medium flame.
5. Once the ingredients turn into a golden brown color, add sesame seeds, rock salt and hing.
6. After the sesame seeds are roasted, turn off the stove and cool the ingredients completely.
7. Transfer them to a mixer jar and grind them all to a fine powder.
8. For making the sesame rice, take a wide kadai and add oil to it.
9. Once the oil is hot enough, add chana dal, urad dal, peanuts and cashewnuts. Saute until they are golden brown in color.
10. Then add the mustard seeds, red chillies and curry leaves.
11. After the tempering is done, add the cooked rice and ground sesame powder.
12. Give it all a quick mix and check for seasoning. Add salt or sesame powder if required.
13. Lastly add ghee for a nice flavor and mix well.
14. That's all, Sesame Rice is ready to be served hot.

Sesame Rice is a tasty rice recipe which can be made in a few minutes. For this flavored rice, we first need to prepare a sesame powder which adds all the taste to the rice. This powder is easy to make. You can make it and store it for more than a week but preparing the sesame powder freshly whenever you want gives you a better taste. I have used freshly cooked regular rice in this recipe but you can also use leftover regular rice or basmati rice if you want. This is a great lunchbox recipe too.
