Short answer is, this would actually make a really great super bowl recipe, highly recommended.
Longer answer, I had 2 people try a small amount of it and they both liked it for what it was, it's not a fantastic like make this every night for dinner recipe but if you gotta feed people who are about to get wasted real quick this is the correct way to do it. This is a gigantic portion though, and it is super filling so cut this by at LEAST half if you aren't feeding a lot of people.
I'm pretty sure this isn't actually enchiladas it's some kind of casserole instead, is it cultural appropriation by white people? I've also wanted to do this video for at least a year now, finally had the right opportunity to do it.
