Sicilian Cannoli Original recipe!

It's a time when we go crazy for cannoli and I absolutely wanted to try making them at home. This recipe is super simple and with few ingredients!

I will never buy them again, too good!

INGREDIENTS for 50 cannoli:
• Flour 00 weak 500 gr
• Rose wine 165 ml (not exceeding 11% vol)
• Honey 50 g (or sugar)
• Lard 50 gr (from the fridge)
• Sunflower oil (for frying)

INGREDIENTS for the filling:
• Sheep ricotta 1 kg (Drain overnight)
• sugar 200 gr
• chocolate chips 50 gr

TO GUARANTEE:
• Candied orange
• Candied cherries
•pistachio
•powdered sugar

METHOD :
• Mix all the ingredients for the Wafer And knead to form a loaf
• let it rest for 30 minutes in the refrigerator
• cut a small piece from the dough and roll out a thin sheet of about 1 mm with a pasta machine or by hand
• cut diamonds of 15x13
• wrap around the steel cylinder, close the ends by wetting with water or egg
• fry for 45 min at 180 °
• sift the ricotta and add the sugar and mix well, finally add the chocolate chips
• fill the cannoli with a spatula
• garnish according to your preferences

For the candied oranges:
Orange peel 100 gr
Sugar 100 gr
Water 100 gr

• Cut the peels into thin strips
• pour all the ingredients into a saucepan
• cook for 67 minutes over medium heat
