1 onion diced
23 cloves of garlic minced
2 medium beets roughly chopped
6 medium carrots roughly chopped
2 tsp dried basil
1 tsp dried oregano
1 tsp lemon juice
1 cup of water/ vegetable broth (for steaming veggies)
1 cup vegetable broth (for blending)
OPTIONAL: 2 tsp salt OR to your taste
Add 1/4 cup of water to a saucepan on medium heat. Add onions and garlic and cook for 5 minutes until onions have softened slightly. Add dried basil and oregano, beets, carrots, and water/ vegetable broth. Cover and simmer until veggies are soft ( about 30 minutes depending on the size you cut your vegetables). Once vegetables are cooked, allow them to cool. Transfer vegetables and vegetable broth to a blender. Blend until completely smooth. Your sauce is ready to use, enjoy!
