Welcome back to What’s For Tea. Tonight for tea I combined three of my favourite things…pasta, chilli & cheese! Which resulted in a delicious Chilli Mac ’n’ Cheese :) I made this in the slow cooker, or Crockpot. The ingredients below will serve 4 generously…or 5 if you like a more sensible amount of pasta :D

What I used Serves 45

A little oil for frying
1 Medium onion finely diced
One red pepper finely diced
1 Tablespoon Tomato puree (or tomato paste)
2 Teaspoons crushed garlic
3 Tablespoons chilli powder
1 Teaspoon powdered cumin
1 pound (16oz) Minced or ground beef
Salt according to your own taste
400g can (2.5 cups) red kidney beans
400g can (2.5 cups) Chopped or crushed tomatoes
220ml (1 cup) Beef stock or beef broth
300g (2 cups) Pasta of your choice
2 Handfuls of grated cheese (I used cheddar & mozzarella)
