CUBAN MOJO MARINADE (*I adjusted this recipe for 3 shoulders, since this is for 8 lbs. of pork shoulder)

4 tbsp. olive oil
4 tsp salt
2 tsp pepper
1 cup orange juice
1/2 cup lime juice
4 tsp. dried oregano
8 cloves garlic minced
8lb. pork shoulder (Boston butt)

To make the marinade, combine all ingredients minus the olive oil, and mix (best results in food processor/blender). After 2030 seconds, stop and add the olive oil. Continue to blend together for another 30 seconds or until all of the ingredients are adequately blended. Place in refrigerator until ready to use.

*For best results, marinate the pork for 1224 hours!
