Fire up your smokers and let's cook up some Wild Goose Pastrami! This recipe uses breasts from a Canada Goose, but you can use the breasts from any wild or domestic goose. The process involves curing the breasts and adding a homemade pastrami rub before putting it in the smoker, and man is it AMAZING. I prefer it skin off, but you can keep it on and follow the same steps. Let's get to it!
